Lecithin

Lecithin (additive E 322) is one of the components used in the creation of food products. It is a universal emulsifier for a wide range of uses. Lecithin is produced from oil products, including sunflower, rapeseed or soy. The main phospholipids contained in the products are phosphatidylethanolamine, phosphatidylcholine, phosphatidylserine and inositol-containing phosphatides. It perfectly shows its properties on the surface during phase separation of different types of substances, helps to reduce surface tension and shows emulsifying properties.

Sunflower oil lecithin is an emulsifier, which is a mixture of phospholipids (40-65%) with triglycerides and a small amount of other substances. Widely used in food and cosmetic industries.

Smell – characteristic of sunflower lecithin
Color – from yellow to light brown
Acid number – not more than 40 mg / KOH
Color number mg of iodine – no more than 35
Mass fraction of substances insoluble in toluene – 0.3%
Mass fraction of FFA – not less than 20 +/- 4%
Mass fraction of moisture – no more than 2%
Mass fraction of substances insoluble in acetone – 40-65%

For storage, use metal-type cans with a tight-fitting lid. They must be protected from light, storage temperature from 0 to 30 degrees.

Lecithin is a substance of plant origin. The demand for lecithin is especially relevant in the food industry, where the composition of the substance is used as a surface-active element. What makes lecithin popular? First of all, it is his naturalness, in addition, it has excellent characteristics.

Food lecithin is produced by hydrolysis of composite phospholipids and active components. As raw materials for food lecithin, by-products of the production of oil and soy formulations are used.

The hydrophilic component of the product is excellent in water based, hydrophobic ˗ in non-polar solvent (fat). Distributed between the phases, lecithin is designed to stabilize the emulsion, and when added to the products, it forms and maintains the uniformity of the dispersion. As part of the technological process, the substance is also in demand as a viscosity regulator, antioxidant, antifoam, wetting agent, etc. Currently, various processing technologies are known to produce various types of lecithin. Such are used in various industries. This is not only the food industry, but also space, chemical, in the creation of feed products.

The main natural sources of supplement E 322 are called foods that contain a large amount of fat. Traditionally, this is an egg yolk, which gave the name to the product, as well as nuts and liver.

It is characterized by high surface-active properties, due to which the substance is used as a lubricant agent. This emulsifier is highly effective and practical to use. In addition, the role of antioxidant is characteristic of lecithin.
